What it is really for: the end of a meal rather than the middle of one. You open the bottle with it, then use the same knife on cheese and cold meat. Barely three and a half ounces in a jacket pocket, 10 inches from tip to tail, and a shape that has been carried at French tables for two centuries.

The corkscrew

The worm folds into the back of the handle and swings out on its own pivot, opposite the blade. That layout means you can have the corkscrew deployed with the blade safely shut, which is the whole point — you are not holding a live edge while you lean on a cork. Center the worm, drive it straight down instead of at an angle, and lift with the whole handle.

The spring and the bee

This is a slip joint, not a locking folder. A flat spring runs the length of the spine and presses on the tang, holding the blade firmly open or firmly shut with nothing to unlatch. At the rear, where the spring meets the handle, sits the small forged bee. It is a piece of Laguiole grammar you can identify the pattern by across a room, and on this knife it is finished bright against the horn.

How ram horn ages

Ram horn is keratin, layered like a fingernail, and it is translucent at the thin edges — hold this handle to a candle and the amber lights up from inside. It darkens slowly with skin contact and takes on a soft gloss along the areas your fingers rest. It also hates two things: soaking and dry heat. Wet it and it swells, bake it near a radiator and it can check.

Care: dry the blade before it folds away, and keep this knife out of the dishwasher entirely. A drop of oil on the pivot every few months keeps the action sweet. If the horn looks chalky, a very small amount of mineral oil worked in with your fingers brings the depth back. Store it closed and dry, not in a damp drawer.

FAQs

Does the blade lock open? No. Slip joint springs hold it open under tension. Close it with a finger clear of the edge path.

Is each handle the same? No. Horn is natural, so color and figure differ between knives.

Is it a table knife or a pocket knife? Both, honestly. It folds for carry and cuts like table cutlery.
