Description

Grey Stalker is deliberately understated. Walnut scales, a polished stainless bolster, a satin gray D2 drop point with a gut hook, and an oxblood leather sheath — the kind of knife that looks like it has always been in the family even on the day it arrives. There is nothing tactical about it and nothing decorative either. It is a deer knife.

Sized for the actual job

The proportions here are not arbitrary: nine inches from end to end, four and a half of them blade. Shorter and you run out of belly halfway through a skinning stroke; longer and the knife starts getting in its own way inside a chest cavity. The drop point lowers the tip below the spine line, which does two useful things: it keeps the point from wandering upward into the paunch, and it puts more curve into the belly where the cutting actually happens. The gut hook rides in the spine just behind the tip, so the blade can be flipped over for the zipper cut and then rolled back for everything else without setting anything down.

D2 in a matte satin

The steel is D2, a high-carbon high-chromium tool steel with somewhere around twelve percent chromium and a heavy population of hard carbides through the matrix. In practice that means an edge that keeps working through hide and hair long after a soft stainless has folded, and enough corrosion resistance to survive a rainy morning without drama. It is not stainless, and the difference is worth knowing rather than glossing over — D2 will spot if you leave it wet overnight. The finish is a fine satin drawn along the flats, bright enough to clean easily but grained enough that it does not throw glare across a clearing.

Walnut, which does not need explaining

American black walnut has been the default stock and handle wood on this continent for two hundred years for reasons that have nothing to do with fashion. It is stable, it absorbs shock without feeling dead, it machines and sands cleanly, and its color deepens from cocoa to a warmer brown as it is handled. The scales here are cut from straight-grained stock with a faint ripple through the figure and shaped with a soft palm swell and a slight upturn at the butt, so the hand locks in without a finger guard doing the work. Brass pins run through a full tang and a lanyard hole is drilled at the rear. A polished stainless bolster fronts the handle and adds a touch of weight where it helps the balance.

Sheath

Oxblood leather, deep red-brown, hand-stitched with a contrast thread and wet-formed to the blade, with a snap strap and a belt loop cut wide. The color is unusual on hunting leather and it settles down beautifully once it has been rained on a few times. If you would rather have the same profile with a bolder handle for keeping track of in leaf litter, look at the Blaze Hollow gut hook.

Cleaning and edges

Wash it with warm water and soap on the day, and get inside the hook with a brush — residue hides in that crescent and it is the first place a stain will show. Dry it fully, then leave it out on a bench for an hour before it goes anywhere enclosed. A film of oil before long storage is worth the trouble, and the knife should live outside its sheath between seasons, since leather holds moisture against steel. Walnut takes a rub of furniture wax or mineral oil once a year and comes back looking new. The main edge sharpens on any stone at a moderate angle; the hook needs a small round file or a rat-tail ceramic worked from the inside of the curve. Our piece on honing versus sharpening is worth reading if you are not sure which one your blade actually needs, because most of the time the answer is neither — it is a strop.
