Description
Bluestem Ridge is named for the blue-grey prairie grass that runs to the horizon on cattle country, and for the colour the acid leaves in this blade. The high carbon spring steel is forged, then acid etched, so the flat comes out a cloudy, mottled slate blue that no two knives share, with only the bevel drawn bright. The handle is straight-grained oak, pinned with matching etched pins.
The shape is pure cowboy bull cutter: a deep, square-nosed sheepsfoot with a full straight edge and a notched choil. It slices with the whole length of the edge, which is why the pattern has always been as welcome on a butcher block as it is at the corral.

Built for: ranch and stock work, butchering and trimming, camp cooking, cutting twine, hide and feed sacks, and everyday belt carry. The long straight edge makes it a genuinely good steak and brisket knife as well as a working belt knife.
Care: High carbon spring steel is not stainless. Wash and dry it immediately after food use, wipe it dry after ranch use, and keep a light film of mineral or food-safe camellia oil on it. The acid etch is a protective oxide layer and will deepen into a patina over time — that is the finish doing its job, not damage. Wipe the oak clean and wax it two or three times a year. Never put this knife in a dishwasher, and do not store it inside the leather sheath long term.

What does acid etching do to the blade?
It converts the surface of the steel into a stable dark oxide, which both reveals the grain and structure left by forging and adds a layer of corrosion resistance. It also kills glare. The mottled pattern is a product of the etch itself, so every blade comes out different.
Can I use this as a kitchen or butcher knife?
Yes, and it is very good at it — the flat, full-length sheepsfoot edge is ideal for slicing steak and trimming. Because the steel is high carbon, wash and dry it by hand straight after use and it will serve you for decades.
Will my knife look exactly like the photograph?
No. Oak is a natural wood with its own grain and colour, and the acid etch produces a different pattern on every blade. Your Bluestem Ridge will share the shape, dimensions and build shown, but its face will be its own.
Is the leather sheath included?
Yes. The basketweave tooled leather belt sheath shown ships with the knife at no extra cost. Because it is stamped by hand, the tooling varies slightly.
