Where it earns its keep: at the cleaning table. Skinning a fillet off its hide, following the spine of a big lake trout, portioning a side into even pieces. This is a fish knife first and a slicer second.

How much this blade flexes

A fillet knife works because the blade gives. Press the spine against the rib bones and the edge bends slightly to follow them instead of cutting through them, which is how you leave the bones clean and keep the meat whole. Flex is a range, not a setting — this blade is thin and eight inches long, so it bends most in the last three inches near the tip and barely at all near the handle. Use the flexible part for skinning and the stiff part when you need to push through the collar.

What a long thin blade does badly

Honesty first: this profile is bad at anything that asks it to be stiff. Do not pry with it, do not twist it in a joint, do not use it on frozen fish and do not take it near bone with force. A thin eight inch blade will take a set or snap at the tip if you lever it, and no heat treat prevents that. If your work is mostly heavy and bone-adjacent, a short stiff blade like the Panda 440C cleaver is the right tool and this one is not. Fish, salt and carbon steel

Fish slime, blood and salt water are all corrosive, and this blade is high-carbon Damascus rather than stainless. On a boat, rinse it in fresh water between fish if you can and wipe it on a towel if you cannot. Do not leave it lying wet on the cleaning board while you finish the cooler.

Care: wash by hand, dry it the moment you are done, and give it a thin coat of food-grade mineral oil before it goes away. It will take on a gray patina from fish acids within a few sessions, which is normal and protective. The wenge handle is dense and open-grained — wipe it dry rather than soaking it, and put a little oil on the wood a couple of times a year. Store it out of the leather sheath, since leather holds moisture against steel.

FAQs

Is the blade stiff or flexible? Flexible toward the tip and stiffer toward the handle, which is the usual fillet knife compromise.

Can I use it on meat as well as fish? Yes, as a slicer. For a shorter fish blade, the Colorado Snake fillet knife covers the same job in less length.

Will it rust? It can, if you leave it wet. Dry it and oil it and it will not.
