Suited to: a dinner that runs long. Dark handles hide use better than pale ones, so this is the version that still looks right after a season of Sunday lunches. It runs to 10 inches open, carries a 4.5 inch blade, and hides a worm on the reverse for the second bottle.

The tail

The rear of the handle sweeps up and finishes in a polished steel cap. It is not styling for its own sake. That upsweep is what stops the shut knife wandering off a tilted table, gives your little finger a stop when you are pulling a cork, and puts the balance point of the closed knife behind your palm so it sits still in a pocket rather than swinging.

What the bee actually is

People assume the bee is a badge. Structurally it is the visible end of the backspring, forged into shape where the spring passes out of the handle, and it moves fractionally as the blade opens and closes because the spring flexes. Watch it while you work the blade and you can see the mechanism doing its job. That is a more interesting thing than a logo.

Straight grain and a table

The timber on this one runs in even parallel lines rather than swirling. Straight grain is the most stable configuration wood can have — it moves least with humidity, which matters in a handle pinned between two steel bolsters that do not move at all. Over years it will darken further and the pin heads will sit very slightly proud as the wood settles around them. That is normal and it is how you tell an old one from a new one. If you are buying several for a table, order them at the same time. Blocks cut from one batch sit far closer in color than pieces bought a year apart, and a matched half-dozen reads as deliberate in a way that six near-misses never quite does.

Care: wipe and dry after every use. Do not leave it in a sink. Acidic food will not hurt the handle but will mark the blade if left, so a quick rinse matters more than a thorough one hours later. Oil the pivot when the action feels dry. Never machine wash.
