Description
Night Herder is named for the hand who rode the last watch over the herd — the quiet one, out in the dark. Everything about this knife is that contrast: a D2 blade taken to a full mirror polish so bright it throws the lamp back at you, set against a handle of jet black ebony with a stainless bolster and a fine brass line between them.
Under the finish it is a straight, honest cowboy bull cutter. The 3.5 inch sheepsfoot gives you a full straight edge and a square, blunt nose that cuts hard against hide, rope and sacking with no point to snag, and the notched choil lets you choke right up for close work.

Built for: livestock and ranch work, cutting twine, hide and feed sacks, camp and kitchen chores, and belt carry — but the mirror polish and ebony also make this the one to reach for when the knife is a gift: groomsmen, retirement, an anniversary, a father who has everything.
Care: D2 is a semi-stainless tool steel — very rust resistant, but not rust proof. Wipe the blade dry after use and keep a light film of oil on the polish, which shows fingerprints and water spots more readily than a satin finish. Ebony is a dense natural wood: keep it out of prolonged direct sun and standing water and rub a little mineral oil into it once or twice a year. Do not store the knife inside the leather sheath long term.
FAQs
What is a cowboy bull cutter for?
It is the cattleman’s utility knife. The square, blunt sheepsfoot nose lets you bear down against hide, rope or a feed sack with no risk of the tip going where it should not. It has been carried on ranches for generations and it turns out to be one of the safest and most useful all-round belt knife shapes ever made.
Is ebony a good knife handle wood?
Among the best. Ebony is extremely dense and close grained, so it is hard wearing, stable, and takes a deep natural polish without any coating. It is also heavy enough to give the handle a solid, balanced feel in the hand.
Will my knife look exactly like the photograph?
The blade, bolster and dimensions will match. Ebony is a natural wood — most pieces are near jet black, but some carry faint brown or grey streaking, so the handle on your knife will have its own character.
Does the mirror polish scratch?
A high mirror polish will pick up fine hairline marks with hard use, the same as any polished blade. It can be brought back with metal polish and a soft cloth.
Is the leather sheath included?
Yes. The black leather belt sheath with contrast stitching shown ships with the knife at no extra cost.
