Description

The largest-handled knife in the fudge range, and the one photographed with its board because the two are cut from the same timber. Three inches of Damascus, seven overall.

Works best on: fudge, tray bakes, fondant and firm cheese. Soft materials that a long blade tears rather than cuts. The four by four inch board it is shown with is sized for exactly that job.

A matched board and handle

The board and the handle scales are cut from the same stock, so the figure and color run continuous between them. That is a presentation decision rather than a functional one, but it is the reason this version photographs better than the others in the range. It also means the two age together: the same oil, the same light and the same handling take both to the same tone over a few years, which does not happen when a board and a knife come from different batches of timber.

The handle profile

The scales swell behind the bolster into a rounded belly and then taper to a lanyard eyelet at the butt. On a three inch knife that shaping matters more than it would on a chef knife, because there is nothing else to index your hand against. A single mirror-polished pin sits through the widest part of the scale. There is no bolster and no guard, which keeps the whole knife under the width of your palm.

Full tang, and how you can tell

Look at the top and bottom edges of the handle: the line of steel runs unbroken from the blade to the butt with the scales pinned either side. That is a full tang, and it is why a knife this small has no realistic failure point at the joint. Full tang versus partial tang explains what the alternative costs you, and are Damascus knives worth it addresses the price question directly. The D2 tracker knife shows the same construction at four times the size.

Care: wash and dry the knife by hand the moment you finish with it. Never put the board in a dishwasher either; oil it with a food-safe mineral oil whenever it starts to look dry, and it will outlast the knife. Oil the blade after drying and store the two apart so the board cannot hold damp against the steel.
