Put it to work on: big, dense, awkward ingredients. Pumpkin, cabbage, a rack of ribs, a joint that needs separating. Fourteen and a half inches overall and 18 oz means the knife brings the force and you bring the aim.
How the pattern gets there
Two steels with different alloy content are stacked, welded in the fire, drawn out and folded again, over and over. Grinding the bevel cuts through those layers at an angle, and the acid etch at the end darkens one steel more than the other. That is the whole trick — the figure is a cross-section of the billet’s history. Our guide on how Damascus steel is made goes through it step by step.
Why the tip is squared off
A cleaver with a blunt front end can be pushed with your other hand, used to scrape a board clean, and set down without stabbing anything. You give up piercing, which a cleaver was never for. It also means the full 9 inches is usable edge rather than tapering away to a point you cannot cut with.
The 5.9 inch handle
Nearly six inches of handle on a knife this heavy is not excessive. It gives you somewhere to move your hand as the work changes, and it moves the balance point back toward your grip, which keeps a heavy blade from feeling like it is running away from you.
Technique for a heavy blade
Do not push. Lift the knife, set the edge where you want it, and let it drop. A blade this heavy will go through a cabbage under its own weight, and forcing it is how people slip. Keep your guiding hand curled with the knuckles forward and the edge simply cannot reach your fingertips.
What is not in the table
The specification lists no handle material for this model. It does give you the two numbers that decide how it feels: 5.9 inches of handle and 18 oz in total.
Care: treat it as a carbon steel tool that lives in a kitchen. Wash and dry by hand every time, never leave it in standing water, and oil the blade lightly each month. Bring the edge back on a stone rather than a pull-through — see how to sharpen on a whetstone. A hand-stitched leather sheath is included.
FAQs
Will the pattern fade with sharpening? No. Each sharpening exposes fresh layers, so the figure changes very slightly and never disappears.
Is this too big for a home kitchen? It needs a full-size board. The 12 inch chef cleaver covers the same ground in a smaller footprint.
Can it be engraved? Yes, as a paid option at checkout, done in our shop before it ships.
