Right for: a first handmade knife, or a second one you are not precious about. Nothing on it punishes a beginner, and nothing about it gets outgrown in a month.

Wood against bone

The choice between a wood panel and a bone one is mostly about how the handle ages. Bone stays close to how it arrives. Wood moves: it darkens with skin oil, the figure comes forward as the finish thins, and after a couple of years the two panels will have gone slightly different colors depending on which one your fingers sit against. Some people find that irritating. Others buy the knife specifically for it, and they are the ones who still own it in a decade.

What D2 is doing here

D2 was a die steel before anyone put it in a knife. It was designed to survive repeated hard contact without deforming, which is exactly why the edge lasts and exactly why the steel fights back on a stone. Diamond or ceramic will cut it; a soft natural stone glazes over and burnishes the edge instead of removing metal. If you own exactly one sharpening tool, this is the steel that decides which one it ought to be.

Storage

A wood-handled knife should not live in a sealed box or a leather pouch for months at a time. Both trap moisture against the panels and the pins, and the damage is slow enough that you do not notice it until the wood has already moved. A drawer with air passing through it, or an open stand, is better for the handle and better for the blade.

Care

Wipe the blade after handling, and oil it before any long storage; D2 resists corrosion but does not ignore it. For the walnut, a thin coat of wax or a food-safe finish once or twice a year keeps the panels from drying and pulling away from the bolsters. Buff it back rather than leaving it tacky, which attracts everything in a pocket.
