Why this one moves
Nothing about it is clever. The blade is a plain grind with no swedge to catch, the handles are stainless with bone set flush, and the pivots are tuned on the bench before it is boxed so the first hundred openings do not feel gritty. Proportions

Care

The bone needs no treatment at all beyond staying out of dishwater and solvents. Pivot screws can back off with heavy flipping; a small turn on each brings the action back.
